It was a weekend full of cooking & baking !
We had our wonderful neighbours over on Saturday for Greek night, and I'm pretty happy with my
first try at making Spanakopita. I found a great recipe, http://allrecipes.com/Recipe/Spanakopita-II/Detail.aspx which I modified to include ricotta cheese, and garlic, and oregano. For once my husband didn't accuse me of being heavy handed with the oregano. I always deny oregano overload, but secretly, I use as much as I can. I push the envelope with it. Yup, I'll admit it. And yes, I'm aware that using oregano, an Italian spice in a Greek dish might be considered blasphemous, but hey, it's my recipe !
In addition to the Greek food, I decided to whip up a preview to Christmas cookie season. My mom had been asking about a good, unique recipe. I found one that sounded good, so gave it a try.
Chocolate filled Cherry Dipped Cookies- also known as heaven in a bite.
First you stuff maraschino cherries with a chocolate chip....
Then you mix up the dough, and wrap a table spoon of dough around the yummy spiked cherries. Pop these babies into the oven for about 17 minutes, and when they come out, dip the tops of the cookies in a special chocolate sauce.
(There is a secret to this decadent chocolate sauce !)
Ours were gone by the next morning.

Oh, yum yum yum! I love chocolate and I love cherries...and I'm sure I would love those chocolate cherry cookies!! They would make a great Christmas cookie! Thanks for the recipe!
